Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn Capsicum Masala-SK Khazana Recipe

  • Corn kernels boiled 1 cup
  • Medium green capsicums cut into 3/4 inch squares 2
  • Oil 1 tablespoon
  • Cumin seeds 1 teaspoon
  • Medium onion finely chopped 1
  • Ginger-garlic paste 1 tablespoon
  • Red chilli powder 1 teaspoon
  • Turmeric powder 1/4 teaspoon
  • Coriander powder 43 teaspoon
  • Cumin powder 1/2 teaspoon
  • Tomato puree 1 cup
  • Garam masala powder 3/4 teaspoon
  • Fresh cream 1 tablespoon
  • Salt to taste
  • Fresh coriander leaves chopped to garnish

Method

Step 1

Heat oil in a non-stick pan, add cumin seeds and onion, mix and sauté till onion is lightly browned.

Step 2

Add ginger-garlic paste, mix and sauté till fragrant.

Step 3

Add chilli powder and turmeric powder, mix and sauté for a minute. Add coriander powder and cumin powder, mix and sauté for a minute.

Step 4

Add tomato puree, mix and sauté till the oil separates. Add garam masala powder and mix well.

Step 5

Add green capsicum and mix well. Add corn kernels, mix well, cover and cook for 5-6 minutes.

Step 6

Add cream and mix. Add salt, mix well and cook for a minute.

Step 7

Garnish with coriander leaves and serve hot.
