Yes, though other meats being more common, biryani eaters all over the world can easily swear by mutton. And not just biryanis, curries, bakes and all other preparations with this wonderful meat are always special. Ingredients for Mutton do Pyaaza – SK Khazana Recipe

  • Boneless mutton cut into 1 inch pieces and boiled 450 grams
  • Onion paste 1/2 cup
  • Large onion cut into cubes and layers separated 1
  • Ghee 2 tablespoons
  • Cumin seeds 1 teaspoon
  • Green chillies slit 2
  • Ginger-garlic paste 1 tablespoon
  • Tomato puree 1/4 cup
  • Red chilli powder 1 teaspoon
  • Turmeric powder 1/4 teaspoon
  • Coriander powder 1 teaspoon
  • Red chilli paste 1/3 tablespoon
  • Chicken stock 1 cup
  • Yogurt 2 tablespoons
  • Salt to taste
  • Large green capsicum cut into squares 1
  • Dried pomegranate seed powder 1 teaspoon
  • Garam masala powder 1 teaspoon
  • Lemon juice 1 teaspoon
  • Onion rings to garnish
  • Fresh coriander sprigs to garnish
  • Lemon wedges to garnish

Method

Step 1

Heat ghee in a steel handi. Add cumin seeds and once they begin to change colour, add green chillies and onion paste, mix well and sauté for 2-3 minutes.

Step 2

Add ginger-garlic paste, mix and sauté for 1 minute. Add tomato puree, mix well and cook for 1 minute.

Step 3

Add chilli powder, turmeric powder, coriander powder, chilli paste and 2-3 tablespoons chicken stock, mix well and cook for 2 minutes.

Step 4

Add yogurt, mix well and cook for 1-2 minutes. Add mutton pieces, salt and remaining chicken stock, mix well and simmer for 5 minutes.

Step 5

Add onion, capsicum and pomegranate seed powder, mix, cover and cook for 5-6 minutes.

Step 6

Add garam masala powder and lemon juice and mix well.

Step 7

Transfer into a serving bowl, garnish with onion rings, coriander sprig and lemon wedge and serve hot.
